Creative Cooking | Mixed Fruit Pie


So again, another yummy creation from what I found in my freezer. This time it was a bag of cut up fruit, from when I was going through my juicing phase. Not that I don't like juice anymore, it's just too cold to make frozen juice drinks at the moment. So pie it was. I didn't really follwo any paticular method, really it was just a sandwich bag of mixed fruit, 4 more apples and 2 handfuls of frozen berries. I will try to write up a rough ingredients and method, but really it was just off the top of my head and all guess work.


Okay so the crust is a little brown, but the taste is amazing!

Mixed Fruit Pie


Ingredients
  • 2 kiwi fruit
  • 1 pear
  • A handful of grapes
  • 2x handfuls of frozen berries
  • 5 apples
  • 1 tablespoon of brown sugar
  • 50g of butter
  • 1x tablespoon of lemon juice
  • 1 tablespoon of corn flour
  • 6 sheets of shortcut pastry
Method
  1. Melt the butter over a low heat and stir in the sugar until caramelised
  2. Cut up all fruit into small pieces
  3. Add fruit to saucepan and stir occasionally
  4. Add lemon juice
  5. Keep on heat until soft
  6. Stir through corn flour until desired thickness
  7. Remove from heat and let cool completly
  8. Cover pie plate in shortcut pastry, then lay a sheet of baking paper on, weighed down with rice (or something similar)
  9. Put in oven for 15 mins, then remove rice and return to oven for a further 5 minutes.
  10. Remove pie crust and fill with fruit mixture
  11. Cut strips of shortcrust pastry and layer on top to form lid
  12. Brush a light coating of melted butter over lid
  13. Cook for 40-45 minutes, or until brown.
  14. Serve and Enjoy!!!
